Almond Croissants - Croissants aux Amandes

Ingredients:
- 6 to 8 day-old croissants
- 1/2 cup plus 2 tablespoons sugar
- 1 cup water
- 1 cup almond powder
- pinch salt
- 100g butter
- 2 eggs
- 2 tablespoons sliced almonds
- icing sugar
Instructions:
- Boil water and 2 tbsp sugar, stir/simmer for a minute then transfer to shallow soup bowl to cool.
- Combine rest sugar, almond powder and salt then add butter, mix well then add eggs and mix until creamy.
- Dip croissants in syrup then slice and put on tray with greaseproof paper.
- Spread inside with 2 tbsp filling and the top with another one tbsp and sprinkle with sliced almonds.
- Bake at 180 deg for 15 minutes.
- Dust with icing sugar.
