   
Bouillabaisse
This is the famous fish soup dish from the port city in the south of France, Marseille, and is a traditional fisherman's meal.
Ingredients:
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 cup chopped onion
- 1 clove garlic
- 1/4 cup flour
- 4 cups fish stock
- 1.5 cups cooked/canned tomatoes
- 1/2 cups white wine
- 1 tablespoon lemon juice
- 1 bouquet garni (bayleaf, parsley) plus salt/pepper
- 2kg fish (such as mussells, fish fillets, prawns, crab meat)\
Instructions:
- Melt butter and oil in a large pot.
- Saute onion and garlic then stir in flour.
- Add fish stock, tomatoes, wine, lemon juice and seasonings then simmer on low heat for 1 hour.
- Add fish and cook for 5-10 minutes until tender.
- Serve the soup with bread.
