   
Croque Monsieur
This french toasted ham and cheese sandwich started to appeared on Parisien cafe menus in 1910 and is now a well know fast-food snack in France. The name comes from the verb "croquer" which means 'to crunch' and "monsieur" probably is because that's the way people asked for it in bars and cafés.
Ingredients:
- 1/2 cup butter
- 1/2 cup plus 1 tablespoon flour
- 4 cups milk
- 1 cup grated plus 250g sliced gruyere or swiss cheese
- nutmeg
- salt and pepper
- 8 slices white bread
- 200g french ham
Instructions:
- In a medium saucepan, melt butter over medium-high heat then add the flour and cook until foaming, stirring constantly, about 1 minute.
- Slowly add warm milk to butter-flour mixture, stirring so that no lumps form. Bring mixture to a boil then reduce heat to low and cook 2 minutes more.
- Stir in half of grated cheese, and season to taste with salt, pepper and nutmeg.
- Cook until thickened, 2 to 3 minutes then remove from heat, transfer to a bowl and set aside to cool.
- Toast the bread slightly then cover with a small amount of sauce, a slice of cheese, slice of ham then another slice of cheese, finally then another piece of bread.
- Spread each with additional sauce and sprinkle with remaining half of the grated cheese.
- Place sandwiches in a griller until golden brown and bubbly.
